“CHOCOLATE OATMEAL NO-BAKE COOKIES” IS IN:

CHOCOLATE OATMEAL NO-BAKE
COOKIES
 
2 cups sugar
1/2 cup cocoa
1/2 cup (1 stick) butter
1/2 cup milk
1 tsp. vanilla
3 cups quick-cooking oatmeal
1/2 cup peanut butter

Combine sugar, cocoa, butter and milk in a saucepan. On medium heat, bring to a boil for one full minute.

Remove from heat. Stir in peanut butter (optional), vanilla and oatmeal.

Drop by spoonful onto wax paper. Let cool for at least 30 minutes.

I remember making these with friends when growing up in Texas many years ago. Great to discover the recipe again. Here's my twist: substitute 4-5 oz. chopped bittersweet chocolate (such as Baker's) for the cocoa; then, after the cookies have cooled slightly on the wax paper, make an indent in the top of each one with a spoon and sprinkle on some Kosher or sea salt. These don't last long at my house!

I made these no bake cookies in school they were called Missouri cookies. I grew up with five brothers, they would actually pay me to make them. Lemon supreme pie from bakers square was my favorite dessert, my brother would purchase a pie for me and I would bake him a batch of cookies. I thought it was even trade.

I use coconut oil to replace the butter and I do not notice the difference. And coconut oil is super good for you! Now the sugar part ...

I have tried this recipe 2 x's and it has been crumbly and hard both times. It will not spoon out, it seems too dry. What am I doing wrong? Please. What I have tasted of the crumbs taste great. Thank's in advance for your help.

I have added chopped raisins and chunky peanut butter to this recipe... yum! Tastes some what like a Chunky candy bar. Love how easy they are and great for a quick sweet gooey attack.

To Teri from Texas: You are cooking it too long and/or on too high a temperature. Once it comes to a low boil, cook no more than 2 1/2 -3 minutes and remove from heat. Do NOT stir during cooking. You can add some more milk if you do cook too long. Just add a little at a time for right consistency.

My mom used to make these as well.... cooked 2 minutes!! (in between other suggestions!!) had leftover coconut milk so used that instead of milk. Added a handful of coconut too. Used reg oats instead of quick and I think that makes the chocolate richer looking. These look prettier than the old ones I used to make. Whether the oats or coco milk, I don't know.

These are so yummy! I have always made them with old fashioned oats, and they turn out great every time! I didn't have any peanut butter this time, so just skipped it, and they were still delish!

Excellent basic recipe!!! You can add to just about anything you like to this recipe... Also you don't have to measure exactly.. I just take out of the peanut butter jar what I think is 1/2 cup... Really need to double this though..
