“CHOCOLATE OATMEAL NO-BAKE COOKIES” IS IN:

CHOCOLATE OATMEAL NO-BAKE
COOKIES
 
2 cups sugar
1/2 cup cocoa
1/2 cup (1 stick) butter
1/2 cup milk
1 tsp. vanilla
3 cups quick-cooking oatmeal
1/2 cup peanut butter

Combine sugar, cocoa, butter and milk in a saucepan. On medium heat, bring to a boil for one full minute.

Remove from heat. Stir in peanut butter (optional), vanilla and oatmeal.

Drop by spoonful onto wax paper. Let cool for at least 30 minutes.

I grew up with this no bake recipe. My version calls for 1/4 cup of each; mashed walnuts & raisins. Mixed same time with peanut butter.

I use Carob powder instead of cocoa powder and it turned out just as good as if it were cocoa powder.

Great basic recipe for this classic, and easy to modify. I've made it twice. The first time I followed the recipe exactly but used half and half for the milk because that's what I had on hand. I also added the peanut butter, because that's the way my mom made them. They were very good, but a little too sweet for my taste. The second time I reduced the sugar to 1 1/2 cups and added a touch extra milk and peanut butter. They are perfect-the sweetness doesn't overpower the other flavors as much so they taste even chocolatier. Can't speak to the final texture as they are still in the fridge but it looks great too. Thanks for sharing!

I made a batch of these and they were delicious ! I didn't realize until I completed the cooking that I had only added 1/2 stick of butter. I think this made them set quicker and they were yummy !

Adding about 2 teaspoons worth of salt really brings out the flavor in this recipe. Kind of like salted caramel, without the caramel.

I have made these since I was a kid. In my family they are called "Cool Cookies". To add coconut to the recipe reduce oatmeal to 1.5 cups. Add 1 to 1.5 cups of coconut. Do not omit peanut butter! It makes the recipe.

For those who are saying their cookies aren't hardening, I was always told to boil it until the chocolate is in the soft ball stage. This is when you can pour a drop of the boiling chocolate mixture into cold water in a cup. If you can make a ball by rolling it between your fingers, its done and ready for the vanilla and oats.
