CALAMARI SAUCE (SQUID) | |
1/4 chopped onion 2 cloves of garlic 1/2 tsp. parsley 1/4 c. oil 3 lb. squid, cleaned 1 lg. can tomatoes, crushed Salt & pepper to taste 1 can anchovies in oil 1 tsp. Italian seasoning 1 lb. spaghetti 1/2 tsp. sweet basil Saute onion and garlic in oil. Add anchovies, tomatoes, and seasoning. Simmer 1/2 hour, then add squid. Simmer 1 hour. Cook spaghetti, then add sauce. This recipe was always served on Christmas Eve. |
