FRIED SHRIMP IN BEER BATTER 
1 c. flour
1/2 tsp. sugar
1/2 tsp. salt
Dash of pepper
Dash of nutmeg
1 tsp. baking powder
1 beaten egg
1 c. beer
2 lb. fresh shrimp
Cooking oil for frying

Work the above ingredients, except for the shrimp, into a beer batter. Peel shell from shrimp, leaving the last sections and tail intact. Cut almost through shrimp at the center bake without cutting ends. Dry shrimp and dip into beer batter. Fry in deep hot oil until golden brown. Drain and serve at once.
