SURPRISE SQUASH CASSEROLE 
6 yellow crook neck squash
3 eggs
1 pkg. Cheddar cheese, grated
1/2 small bottle Ranch dressing
1 small onion
croutons
salt and pepper to taste
1/2 stick butter

Slice onions and squash. Cover with water. Stew until crisp. Not done. Add butter. Let cool for about 20 minutes.

In mixing bowl, add eggs, cheese and Ranch dressing. Whisk together. Pour into squash mixture. Butter large Pyrex casserole dish. Pour into dish and cover with croutons.

Bake at 375°F for approximately 45 minutes. Test for doneness.

Great for NON vegetable eaters...tastes like something really special.
