CREAM RICE PUDDING | |
1/2 cup rice 3 cups boiling water 1 1/2 tsp. salt 1 (14 oz.) can Eagle Brand sweetened condensed milk 1/2 cup raisins (optional) 1 egg, slightly beaten 1 tsp. vanilla Wash rice thoroughly. Place in top of double boiler with water and salt. Cover. Cook over rapidly boiling water about 40 minutes until rice is tender. Add sweetened condensed milk and raisins. Slowly add beaten egg. Cook 15 minutes longer. Add vanilla. Serve hot or cold. Makes 8 servings. FRUITED RICE PUDDING VARIATION: 1 cup drained, crushed pineapple or 1 cup sliced strawberries or 1 cup fresh raspberries Proceed as for Cream Rice Pudding, adding one of the listed fruits after pudding has been cooked. |
