“VANILLA BUTTERCREAM FROSTING” IS IN:

VANILLA BUTTERCREAM FROSTING 
1 (1 lb.) box confectioners' sugar
1/2 cup (1 stick) butter, softened
3 tbsp. milk
2 tsp. vanilla

Beat confectioners' sugar, butter, milk and vanilla with electric mixer at low speed until well blended and smooth. If frosting becomes too thick, beat in additional milk by teaspoonfuls until the frosting is of spreading consistency.

Makes about 2 1/2 cups frosting.

I originally got this recipe from my sister who sourced it from her culinary school and have never been displeased with the results! I have food allergies and trade milk for enriched rice milk and butter for vegan butter, and it still comes out perfect! I'm so glad that someone else is sharing this recipe too.

This was delicious. I will use this as my frosting from now on. I hope you can answer a question for me though. It was rather gritty in texture and I was hoping for a smoother finish. Would beating it longer help smooth out the texture? Or like a reviewer above suggested to someone else, beat the butter till creamy before adding the sugar?

I made this recipe, and everyone loved it! I did use room temperature butter, and when it looked a little runny, I just added more sugar to stiffen it up. Turned out perfect!

I can see why some people say it seemed more like icing, but I didn't think it was a problem and it tastes great anyways! My only complaint is that the recipe didn't make enough to frost a whole cake.

This is a fantastic frosting. It is delicate, sweet, and sort-of/kind-of sets up like royal icing since it's not gooey and greasy like store-bought icing (which I've only used in cases of a dire cupcake emergency). The consistency is perfect! I followed the recipe exactly as it's submitted and the result is not too runny, not too stiff. I did, however, beat it with a stand-mixer for about 4 to 5 minutes, adding the extract at the very end. I used Wilton's clear vanilla extract and got a beautiful, pure white icing. Then I tried it with lemon extract and it was a fantastic flavor since the frosting is so sweet to begin with. This is a simple and elegant frosting that is very versatile and accommodates flavorings very nicely. Thank you E.J.H. for this gem of a recipe.

Maybe you are used to the store kind that is made using shortening. If you don't like the buttery taste of buttercream frosting, make it using shortening instead like the stuff in the can. I do like the taste of butter in my buttercream! Yum!

Delicious! Substituted whipping cream for milk since I had it and someone said theirs came thin. I probably used 4T of it. Then I whipped it on medium to fluff it up a bit. My boys love it -- 10 yr old said it will be "all the rage." ha-ha Thanks so much!! Very quick and easy, yummy to boot!
