PORK ROAST WITH ONION GRAVY 
1 env. (about 1 1/2 oz.) onion soup mix
5 lb. pork loin roast
1/2 c. water
1/4 c. all-purpose flour

Place a 30 x 18 inch piece of heavy duty aluminum foil in a baking pan, 13 x 9 x 2 inches. Sprinkle soup mix in center of foil. Trim excess fat from roast. Place roast fat side down on the soup. Fold foil over and seal securely, folding up the ends.

Cook in 300 degree oven for 3 1/2 hours. Open foil wrapping and remove meat to platter; keep warm. Skim excess fat from meat drippings and add enough water to measure 2 cups. Pour into pan. Shake water and flour in a covered jar. Stir flour mixture slowly into liquid in pan. Heat to boiling, stirring constantly. Boil and stir 1 minute. 6 to 8 servings.
