"MAKE AHEAD" MASHED POTATOES 
5 lb. potatoes
3 tbsp. butter
Milk
Salt
Pepper
8 oz. cream cheese, softened
1 c. sour cream
Paprika

Pare and boil potatoes until soft and ready for mashing. Drain well. Mash potatoes with the butter and add a small amount of milk to make it of the consistency of not quite creamy mashed potatoes. Add salt and pepper to taste.

Add sour cream and cream cheese. Beat until well blended. (May be refrigerated up to 1 week.) If desired, add onion salt or garlic salt. Sprinkle paprika on top. Bake at 350 degrees for 25 to 30 minutes until hot or approximately 10 minutes in microwave.

Since microwave ovens vary in power, you may need to adjust your cooking time.
