PATTI'S CARROT CAKE 
2 c. plain flour
2 c. sugar
2 tsp. baking soda
2 tsp. cinnamon
1 tsp. salt
1 1/2 c. Wesson oil
4 eggs
3 c. grated carrots
1 c. chopped nuts

Sift and mix dry ingredients. Add Wesson oil and stir well. Add eggs one at a time and mix after each. Add carrots and nuts and blend. Bake in 2 greased and floured 9 inch o r one 9 x 13 cake pan for about 40 minutes at 350 degrees.

ICING:

1 lg. pkg. cream cheese
1 stick butter
1 box confectioners' sugar
1 c. chopped pecans
2 tsp. vanilla

Cream soft butter and cream cheese. Add sugar, vanilla and nuts. Spread over cake.
