EASY PUMPKIN CREAM PIE 
1 lg. pkg. Jello vanilla pudding mix
3 tbsp. sugar
1 tsp. pumpkin pie spice
1 (13 oz.) can evaporated milk
1 egg, slightly beaten
1 c. canned pumpkin
Baked 9" (deep) pie shell, cooled

Combine all ingredients. Cook in saucepan over medium heat, stirring until mixture comes to a full rolling boil. Remove from heat. Cool 5 minutes, stirring twice. Pour into shell. Chill for at least 4 hours. Serve with whipped topping. Add chopped nuts if desired.

I have looked for this recipe for quite some time. I lost it years ago and couldn't find it anywhere! I always liked this recipe better than regular pumpkin pie!

Ditto Elizabeth, I too lost this recipe. It is very hard to find. So delicious, tastes like the pumpkin pie & whip cream in one. No cream really needed to top this off. When your oven is in use at this time of year, it is especially nice to be able to cook this on top of the stove.

I tried this recipe, but I had to substitute coconut cream pie filling for the vanilla, and I put it into a pre-made graham crust. It tasted great!

My grandma use to make a similar receipe...w/ coconut! When she passed away, the recipe went with her. :( So I tried to emulate it for our first Thanksgiving w/out her... and I tried a different twist. French Vanilla Pudding, with a tad of Fr Van Coffee Creamer (which is also a great sub for milk in french toast!) Try some of these ideas, and let me know... hope it works for you as well as me. :)

i love the no baking recipe and ONLY six ingredients! it taste great and is budget friendly. i was in and outta the kichen in no time waitin for this pie to chill to delight my tastebuds again yummy to my tummy.i never had puddin with pumpkin together, it must be this mixture that makes it pop.this is definitely a keeper for my family!

I've made a similar recipe for over 30 years. Mine has the same ingredients but in different quantities and everyone loves it. Mine has 2 sm. pkgs. Jello vanilla pudding mix, 4 tbsp. sugar, 1 15 oz. can Evaporated Milk 5 oz., 1-1/3 tsp. pumpkin pie spice, 1 egg slightly beaten, and 1 15 oz. can pumpkin. Directions are the same.
