MAKE AHEAD MASHED POTATOES 
5 lbs. potatoes
1 (8 oz.) cream cheese
1 (8 oz.) sour cream
1 stick butter (cut into 8 patties)
3/4 tsp. baking powder
Salt or pepper to taste

Cook potatoes, mash. Combine all ingredients except butter. Place in shallow baking dish (glass cake pan). Dot with butter patties. Refrigerate. Bake at 350 degrees for 30 to 40 minutes or microwave until heated through. This recipe may be made several days in advance. It keeps a long time because there is no milk in it.

Since microwave ovens vary in power, you may need to adjust your cooking time.
