ZUCCHINI CASSEROLE 
3 c. thinly sliced zucchini
1 c. Bisquick
1/2 c. finely chopped onion
1/2 c. grated Parmesan cheese
2 tbsp. chopped parsley or smaller amount dry
1/2 tsp. salt or seasoned salt
1/2 tsp. marjoram or oregano
Dash of pepper
1/2 c. vegetable oil
4 eggs, slightly beaten

To beaten eggs, add seasoning, oil and cheese. Add zucchini and Bisquick last. Stir until combined. Bake in greased oblong pan at 350 degrees for 25 to 35 minutes or until golden brown. Cut in squares and serve hot.
