COCONUT CHOCOLATE CHIP COOKIES 
1 1/3 c. flour
1 tsp. baking soda
1/4 tsp. salt
1/4 c. butter
1/4 c. vegetable shortening
1/2 c. sugar
1/4 c. firmly packed brown sugar
1 egg
1 tsp. vanilla
1/4 c. (or more) flaked coconut
1 c. semi-sweet chocolate chips

Preheat oven to 350 degrees. Grease a large cookie sheet. Sift dry ingredients together. Beat butter, shortening, sugars, egg and vanilla together until smooth. Stir in flour mixture until well blended. Stir in coconut and chocolate chips. Drop by heaping tablespoonfuls onto prepared cookie sheet. Bake for 10 minutes or until set.

I just made these for my dad. I know he loves coconut so I thought this would be a good idea. The coconut wasn't enough, so I added more. It still didn't come trough, so before baking, I rolled it in coconut. SOO GOOD.. I also added a little less chocolate chips and found that it was enough. :)
