CHOCOLATE CHIP COOKIES WITH
COCONUT
 
2 1/4 c. flour
1 tsp. baking soda
1/2 tsp. salt
1 c. soft butter (2 sticks)
1/2 c. granulated sugar
1 tsp. vanilla
2 eggs
1 c. chopped nuts (pecans and/or walnuts)
1/2 pkg. of 2 oz. semi-sweet chocolate chips
1/2 pkg. of 14 oz. pkg. coconut flakes (unsweetened)

Mix flour with baking soda and salt; set aside. Beat butter, sugar, vanilla and eggs until light and fluffy. Blend in flour mixture. Stir in nuts, chips and coconut flakes.

Drop from teaspoon 2 inches apart onto ungreased baking sheets. Bake at 375 degrees for about 10 minutes. Cool by removing cookies from sheets onto cake rack. Makes 2-3 dozen.

I found these a bit dry, but my family thought they were ok. Not a sweet biscuit. I forgot to put in the walnuts with no adverse effect. If using salted butter I would not add the the salt. I also used about 2/3 of the coconut recommended and double the choc chips. Ok for a one off but not sure I will make again.
