SWEET AND SOUR RED CABBAGE AND
APPLE SALAD
 
1 med. head of red cabbage, cored and sliced thin
1 lg. tart apple, peeled, cored and cubed
1 sm. green pepper, cut into thin strips
1 sm. onion, minced
1/2 c. red wine vinegar
2 tbsp. honey
1/2 tsp. caraway seed
1/8 tsp. pepper
Pinch of ground cloves

In a large heat proof bowl, mix cabbage, apple, pepper and onion. In a small saucepan, cook and stir the vinegar, honey, caraway, pepper and cloves until mixture begins to boil, about 1 to 2 minutes.

Pour hot mixture over the salad and toss well. Let stand at room temperature for 30 minutes before serving.
