RED CABBAGE & RED BEAN SALAD 
1 small head red cabbage, shredded
1 red onion, thinly sliced
1 (15 oz.) can red kidney beans, drained & rinsed
balsamic vinaigrette, to taste (I use Newman's Own Lite)

Mix cabbage, onion and red beans in a large salad bowl. Pour dressing over all and toss.

Cover with Saran or plastic wrap and place in refrigerator for at least an hour to chill before serving.
