RED CABBAGE & CAULIFLOWER SALAD 
1 head cauliflower, broken in bite-size pieces
1 head red cabbage, shredded
1 onion, chopped
1 lb. bacon, fried & crumbled

DRESSING:

2 c. mayonnaise
1/2 c. sugar
1/3 c. Parmesan cheese
1/2 tsp. salt
1/4 tsp. pepper (or pepper to taste)

Layer 1/2 vegetables and 1/2 bacon in large bowl. Pour 1/2 dressing over. Repeat with rest of vegetables, bacon and rest of dressing. Refrigerate overnight. Toss lightly and sprinkle with Parmesan cheese before serving.

Love this slaw. And it is so festive looking. I cut back onion to 1 tbsp. finely grated and added one chopped Gala apple.
