APPLE-GLAZED CHICK 'N' GRITS GORGONZOLA | |
4 skinned, boned chicken breast halves cooking spray 1/4 c. apple butter 14 c. spicy brown mustard 1/4 tsp. salt, optional 1/4 tsp. red pepper 1/8 tsp. black pepper 2 tbsp. green onion tops, chopped Preheat oven to 350°F. Flatten chicken breast between waxed paper. Place chicken in baking pan coated with cooking spray. Combine next 5 ingredients (apple butter to blk. pepper). Brush over chicken. Bake for 20 minutes. Cut chicken into 1/2 inch slices. Spoon Gorgonzola grits into 4 shallow serving bowls. Top with chicken. Sprinkle with green onion tops. Grits: 2 (14 1/2 oz.) cans fat-free chicken broth 3/4 c. quick cooking grits 4 oz. Gargonzola cheese, crumbled 1/3 c. fat-free sour cream 1/4 tsp. ground nutmeg 1/4 tsp. ground pepper *May substitute other hard Italian cheese. Boil broth gradually add grits, stirring constantly. Reduce heat to low, simmer covered 5 min. or until thick. Remove from heat; Stir in remaining ingredients. Yield: 4 servings. |
