APPLE GLAZED PORK ROAST
2 lbs. loin or pork (6 chops)
1/8 tsp. pepper
1 sm. apple, pared, quartered & sliced
1 tbsp. bottled steak sauce
1/2 tsp. salt
1/2 c. apple juice

Trim all fat from roast, rub roast with salt and pepper. Place on a rack in a roasting pan. If using meat thermometer, insert bulb into center of roast without touching the bone. Pour apple juice over roast, cover pan with foil, fastening it tightly around the edges. Roast in oven at 375 degrees for 1 1/2 hours, remove foil. Lay apple slices on top of roast. Brush with steak sauce. Continue roasting, brushing again with remaining sauce, cook for 30 minutes or until thermometer registers 185 degrees. Remove to heated serving platter.
