SPINACH FLORENTINE 
2 pkgs. frozen chopped spinach, thawed
1/2 c. chopped onion
1 lb. fresh mushrooms
2 tbsp. butter
1 c. Cheddar cheese

Saute the onions and mushrooms in butter. Butter casserole dish and layer spinach, onion/mushroom, cheese, spinach, onion/mushroom, cheese. Bake at 350 degrees for 1/2 hour.
