SALMON PATTIES 
1 12-14 oz size can salmon
1 small onion
1 stalk celery
12-14 Saltine crackers
2 eggs
1 cup cooked white rice (cooled)
1 teaspoon Old Bay Seasoning

Remove any bones/skin from canned salmon. Mix all ingredients. (I like to use my hands for this.)

Make small balls and flatten. Drop into hot oil in deep fryer (365°F), cook until golden brown. Place on paper towels to drain. Season with salt and pepper while still hot and serve.

Try making mixture into patties and breading them in finely crushed saltine crumbs. When you fry to a golden brown on both sides in about 1/2" of oil the patties have a great crust! Yum!
