CHEESE BISCUITS 
2 c. flour
2 tsp. baking powder
1/4 tsp. baking soda
3/4 tsp. salt
4 tbsp. shortening
2/3 c. buttermilk or sour milk
1/4 c. grated cheddar cheese

Sift flour once, measure, add baking powder, soda and salt and sift again. Cut in shortening and cheese. Add milk all at once and stir carefully until all flour is dampened. Then stir vigorously until mixture forms a soft dough and follows spoon around bowl. Turn out on lightly floured board and knead 30 seconds. Roll 1/2 inch thick and cut with floured biscuit cutter. Bake on ungreased baking sheet in hot oven at 450 degrees for 12 to 15 minutes.
