BREAKFAST BURRITOS | |
6 eggs 1/3 c. milk 1/4 tsp. salt Dash of pepper 12 flour tortillas 1 lb. pork sausage 1 med. onion, chopped 2 c. cheese, shredded Beat together eggs, milk, salt and pepper. Set aside. Wrap tortillas in foil. Heat in a 325 degree oven for 10 minutes. Mean while, cook sausage and onion in a large skillet until sausage is brown and onion is tender. Drain sausage mixture, reserving about 2 tablespoons drippings in skillet. Pour egg mixture into drippings, cook, without stirring over medium heat until mixture begins to set on the bottom of skillet and around edge. Lift and fold partially cooked eggs so that uncooked portion flows underneath. Continue cooking for 2 to 3 minutes or until the eggs are cooked throughout. Stir in sausage; heat through. Spoon about 1/3 cup egg mixture onto each tortilla. Sprinkle with cheese and roll up. Serve warm with salsa. |
