THANKSGIVING PORK THRIMBLE | |
6 thick pork chops Salt and pepper Garlic powder 2 cups cranberries 2/3 cup drippings combined with olive oil 2 apples, chopped 1 cup brown sugar 1 tablespoon chopped onion Combine olive oil with pork or bacon drippings (1 -2 tablespoons) enough to measure a total of 3/4 cup. Using a sharp, thin knife, cut a slit pocket sideways through the middle of each thick loin pork chop. Sprinkle chops with salt, pepper and garlic powder. Chop cranberries and sauté in drippings combined with olive oil. Add apples, brown sugar, bread crumbs, and onion. Mix well. Spoon stuffing into pockets being careful not to pack too tightly. Arrange in a baking dish sprayed with non-stick spray. Cover and bake in a preheated 350°F oven for 90 minutes or until pork chops are tender. |
