MINTY CUCUMBER LIME RICKEY | |
This Minty Cucumber Lime Rickey is not only hydrating but also incorporates fresh seasonal ingredients that elevate it above your average summer beverage. The cucumber adds a cool, crisp undertone to the tartness of limes and the effervescence of sparkling water, while mint provides an invigorating aroma and flavor punch. Enjoy this delightful concoction on a sunny day or serve it at your next summer gathering for a hit with all guests! 1/2 cup fresh lime juice (about 4 to 6 limes) 3 tbsp. simple syrup or to taste small handful mint leaves, roughly torn, plus extra for garnish 1/4 medium cucumber, thinly sliced Sparkling water or club soda, chilled Crushed ice Optional: Gin or vodka for an alcoholic version (2 oz per serving) Lime wedges, for garnish Begin by making the simple syrup if you don't have any on hand. Combine equal parts sugar and water in a saucepan, bring to a boil until the sugar dissolves completely, then cool before using. In a pitcher or large measuring cup, muddle together the fresh lime juice, torn mint leaves, and cucumber slices. Let it sit for about 5 minutes to infuse the flavors. Strain the mixture into another pitcher to remove the solids, or leave them in if you prefer a more robust flavor profile. Add simple syrup to the lime-mint mixture and stir until well combined. Adjust sweetness by adding more simple syrup if desired. For each serving, fill a glass halfway with crushed ice. Pour about 2 oz of the lime concentrate (without alcohol) over the ice for non-alcoholic drinks or add the chosen spirit before the lime mixture for an adult version. Top up the glasses with chilled sparkling water and give each one a gentle stir to mix all ingredients thoroughly.
