SWEET CUCUMBER PICKLE OR RELISH 
2 cups pickling lime
1 gallon bottled or well water
7 lb. cucumbers
2 quarts vinegar
10 cups sugar
1 tbsp. salt
1 tbsp. celery seed
2 tbsp. pickling spice

Soak cucumber chips in lime and water for 24 hours. Rinse the lime off and soak in clear water for 3 hours. Rinse and soak for 12 hours in the sugar and vinegar.

Tie the spices in a cheesecloth bag and place it with the soak. Boil the cucumbers in this vinegar syrup and spice solution for 45 minutes. Pack the hot pickle into hot jars and seal.

For many years, the jars were stored with no further processing; that worked well for our mothers and grandmothers! New canning guidelines recommend that we process pints 10 minutes and quarts 15 minutes in a boiling water bath. The processing will cause the pickles to be less crisp, and Granny wouldn't approve! Make them as you like.

If you want to make relish, split the cucumbers into fourths or eighths lengthwise. This makes the soaking and rinsing easier. Grind the cucumbers before the syrup soak and cooking steps.

I tried this recipe & it's similar to the typical "green relish" .....the kind most kids like best. The soaking in lime-water made the little pickle bits REALLY CRISPY!!! Only thing I'd do differently next time is I'd use less celery seed (1 tbsp. was too intense). I used older cukes, peeled & cut them in half & scooped out (threw away) all the seeds etc. My kids really love it...since there's no corn starch in this recipe, it's not "slimy" or "viscous" like the commercial version. Similar taste, nicer texture.

I have used this recipe for lime pickles for years. However, I do not soak in the syrup. As soon as I rinse the lime water, I immediately put washed cukes in the vinegar syrup, boil for 30 minutes, and pack in hot jars. They are always good.

Pickle Crisp is NOT the same as pickling lime!
Pickle Crisp is calcium chloride, pickling lime is sublimed calcium carbonate. They are not interchangeable in recipes!
