BEEF AND BEAN ENCHILADAS 
1 to 1 1/2 ground beef (or chicken)
2 pkgs. tortillas (10-inch round)
2 (10 oz. ea.) cans mild enchilada sauce, divided
1 (15 oz.) can refried beans
1 (4 oz.) can diced chiles
1 small onion, chopped
1 (12 oz.) pkg. shredded cheese

Preheat oven to 375°F. Prepare a 9x13-inch oven safe dish.

Brown beef and onion, drain fat. Add 2/3rds can enchilada sauce, chiles, and beans. Heat.

Spoon into tortillas. Roll. Place in dish. Cover with remaining enchilada sauce, then shredded cheese.

Bake at 375°F for 20 minutes.
