SPLIT PEA SOUP WITH HAM 
2 c. split peas
3 qts. cold water
1 ham bone PLUS
1 c. diced ham
1 sm. onion
1/4 c. diced celery
1 tsp. salt
1/2 tsp. pepper

Soak peas overnight in enough water to cover. In the morning, add 3 quarts cold water to ham bone. Add drained peas, celery, onion, seasoning and diced ham. Heat to boiling. Reduce heat and simmer slowly for about 4 hours or until peas are soft. Add more water as needed. Serve hot. Serves 4.
