SPLIT PEA SOUP 
End of ham with bone
1 lb. dried split peas
4 qts. water
1 lg. onion
4 stalks celery with tops
2 med. potatoes
2 carrots
Parsley
Bay leaf
Salt to taste
Pepper to taste

Chop onions, celery, potatoes and carrots. Put ham with bone, water, celery, onion, parsley, bay leaf. Heat to boiling and simmer 2 1/2 hours. Add potatoes, carrots, salt and pepper. Simmer 25 minutes longer. Remove bay leaf and ham. Cut ham up and return to soup.

Very good and simple. I boiled the bone first for about 1 hr. Took bone and meat out, added everything else and cooked until done then added the meat.
