FIRE STATION CASSEROLE | |
1 lb. ground beef, browned & seasoned to taste or 1 lb. boiled, skinned & boned chicken (about 3 lg. breasts - 1 1/2 to 2 lbs.) 1 doz. corn tortillas 1 can cream of mushroom soup 1 lb. sharp cheddar cheese, shredded 1 soup can of milk 1 sm. can diced chilies Heat together soup, milk and chilies. Cut tortillas into bite-size pieces and layer with ground beef or shredded chicken, soup mixture and top with cheese. Layer until all ingredients are used. Cover with foil and bake in preheated oven at 350 degrees for 40 to 45 minutes. The casserole can be frozen until ready to bake and serve. If desired, green onions and/or black olives can be included in the layering if using glass or Pyrex dish, reduce heat to 325 degrees. Serve with salsa and sour cream and enjoy! |
