NEW YORK FIRE FIGHTERS
CHEESECAKE
 
1 3/4 c. crushed vanilla wafers
1/4 c. butter, melted
4 (8 oz.) pkgs. cream cheese, softened
16 oz. sour cream
1/4 c. melted butter
2 tbsp. cornstarch
1 1/2 c. sugar
6 eggs, beaten
1 tbsp. vanilla
2 tbsp. lemon juice

Combine vanilla wafers and 1/4 cup melted butter. Press in bottom of spring form pan. Mix rest of ingredients until smooth. Bake in 375 degree oven approximately 1 1/4 hours or until toothpick inserted in center comes out clean. Cool. Serve with pie filling if desired.

Best cheese cake ever! I place my spring form pan in a lg. cake pan and carefully pour boiling water into cake pan which has already been placed on a middle shelf in oven...carefully ladle water in pan until water level is about 1 inch deep on spring form pan. I have used this recipe for 30 years. I add almond extract and vanilla vs lemon juice. I also bake crust at 400°F and then wrap spring pan bottom in heavy foil before water bath.
