“SPRITZ COOKIES” IS IN:

SPRITZ COOKIES 
A Crisp Cookie.

3/4 cup (1 1/2 sticks) butter
1/2 cup sugar
1 egg yolk
1/4 tsp. salt
1 tsp. vanilla
2 cups sifted all-purpose flour
colored sugar sprinkles (optional)

Preheat oven to 425°F.

Cream butter and sugar. Add egg yolk and beat well. Add salt, vanilla and flour and mix until combined. Press through pastry tube or cookie press onto baking sheet. Decorate with colored sugars, if desired.

Bake at 425°F for about 8 minutes.

ORANGE SPRITZ COOKIES:

Use 1 teaspoon shredded orange rind and 1/2 teaspoon orange extract instead of vanilla.

Makes 5 dozen cookies.
