STUFFED DATE BUTTER COOKIES | |
A Fruity, Cake-like Cookie. 1/4 cup (1/2 stick) butter 1 lb. soft pitted dates 48 walnut halves 34 cup packed brown sugar 1 egg 1/2 cup dairy sour cream 1/2 tsp. vanilla 1 1/4 cups sifted all-purpose flour 1/4 tsp. baking powder 1/2 tsp. baking soda Preheat oven to 400°F. Stuff each date with a walnut half. Press to hold in shape. Cream butter and sugar. Beat in egg, dairy sour cream and vanilla. Stir in sifted flour, baking powder and baking soda. Add stuffed dates. Use a teaspoon to dip out a batter-covered date. Place on a baking sheet. Bake at 400°F for 8 to 10 minutes. Cool. Frost with Golden Butter Frosting. GOLDEN BUTTER FROSTING: 1/2 cup (1 stick) butter 1 tsp. vanilla hot water 3 cups sifted confectioners' sugar Heat and boil butter in a heavy saucepan until lightly browned, about 6 minutes. Do not burn. Stir in sugar and vanilla. Add hot water until frosting is of spreading consistency. Note: If it begins to spread unevenly, add a bit more water. Makes about 4 dozen cookies. |
