PARMESAN POTATOES 
3 lg. baking potatoes
1/2 c. grated Parmesan cheese
1/2 tsp. salt
1/2 c. yogurt
2 tbsp. butter

Preheat oven to 400 degrees. Oil potatoes and bake one hour at 400 degrees. Cut potatoes in half lengthwise, scoop out shells. Mix potatoes and all ingredients, refill shells. (Top with grated cheddar cheese if you like.) Bake at 400 degrees for an additional 10 to 15 minutes.
