COCONUT CAKE | |
1 Duncan Hines white cake mix Mix by directions but use only 3 egg yolks. Save whites for icing. I cook in 3 layers. Make sure cake is cool before icing. Ice with White Angel Icing. ICING: 1 1/2 c. sugar 1/2 c. corn syrup 1/2 c. water 3 beaten egg whites 3 tbsp. powdered sugar 1 tsp. vanilla 1 c. crushed pineapple 1 lg. can coconut Mix sugar, syrup, and water and bring to boil. Add 3 tablespoons hot syrup to stiffly beaten egg whites. When syrup reaches soft ball stage add 3 more tablespoon syrup to egg whites. Beat well after each addition. Cook remaining syrup until it spins a thread or to hard crack stage. Add to egg whites mixture and beat well. Add 3 tablespoons powdered sugar into mixture. Add vanilla. Let cool a bit before spreading on cake. When ready to stack, place 1 layer of cake plate and put juice from crushed pineapple and some of the pineapple on the layer, then use icing and top each layer with coconut. Spread icing and cover top and sides of coconut. |
