CANNOLI SHELLS 
2 1/2 c. flour
1/4 lb. shortening
3 oz. white wine
3 tbsp. sugar
1 egg

Mix flour, shortening, add egg, wine, sugar and salt. Roll dough thin. Cut into 3 inch squares. Wrap around Cannoli Shell Forms. Moisten edges with egg whites. Cook in hot fat until golden.

FILLING:

1 lb. ricotta
1/2 pt. whipping cream
1 c. sugar
1 tsp. vanilla
1/4 tsp. lemon juice
1/2 crushed nuts, chocolate chips or cherries

Whip ricotta and sugar. Add all other ingredients except whipping cream. Whip cream and fold in. Fill shells.
