AUNE'S PORK CASSEROLE | |
1 (4-5 lb.) fresh pork shoulder 2 tsp. salt 1/2 tsp. pepper 2 tsp. prepared mustard 3 c. drained sauerkraut 3 med. apples, pared, cored & sliced 1 tbsp. sugar 4 med. potatoes, peeled & sliced Set oven for 350 degrees. Trim meat of excess fat. Rub on all sides with salt, pepper and spread with mustard. Place meat on rack in roasting pan. Roast for 1 hour, drain off fat. Remove meat and rack from pan. In the roasting pan now make a layer of sauerkraut. Sprinkle apples with sugar and place on sauerkraut. Top with potatoes. Replace meat in pan on top of potatoes. Cover pan with lid or with foil. Return to the oven and bake for 1 1/2 to 2 hours longer, or until meat is cooked. During cooking time, baste meat with pan juices. Serve with pickled beets. |
