AUNE'S PORK CASSEROLE 
1 (4-5 lb.) fresh pork shoulder
2 tsp. salt
1/2 tsp. pepper
2 tsp. prepared mustard
3 c. drained sauerkraut
3 med. apples, pared, cored & sliced
1 tbsp. sugar
4 med. potatoes, peeled & sliced

Set oven for 350 degrees. Trim meat of excess fat. Rub on all sides with salt, pepper and spread with mustard. Place meat on rack in roasting pan. Roast for 1 hour, drain off fat. Remove meat and rack from pan.

In the roasting pan now make a layer of sauerkraut. Sprinkle apples with sugar and place on sauerkraut. Top with potatoes. Replace meat in pan on top of potatoes. Cover pan with lid or with foil. Return to the oven and bake for 1 1/2 to 2 hours longer, or until meat is cooked. During cooking time, baste meat with pan juices. Serve with pickled beets.

I made this for dinner I did change a few things... as I always do with recipes. I used dijon mustard and added dried thyme leaves to the outside of the meat. I rinsed the sauerkraut with water first then I added 1-1/2 cups of white wine and followed the rest of the recipe except I cooked it in a LeCreuset cast iron pot for about 3-1/2 hours. Then after the potatoes were added I sliced up 2 onions then placed the meat on top. This meat was tender and delicious. And the house smelled heavenly all night.
