LAYERED SAUERKRAUT CASSEROLE 
2 lbs. sauerkraut
1 lb. ground pork
1 med. onion, finely chopped
2 cloves garlic, finely chopped
1 green pepper, chopped
Salt & pepper to taste
4 slices smoked bacon
1 c. cooked rice
1/2 - 1 lb. smoked sausage, sliced
6 smoked pork chops (opt.) (or fresh chops)
1 pt. sour cream
2 tbsp. milk
1 tsp. paprika

Rinse and drain sauerkraut. Mix next 5 ingredients. To large casserole, arrange layers as follows: bacon, sauerkraut, ground meat mixture, sauerkraut, rice, sausage, sauerkraut. Saute pork chops in a small amount of oil. Put chops and drippings on top. Mix sour cream and milk. Pour over top. Sprinkle with paprika and cover tightly with lid or aluminum foil. Bake 1 1/2 to 2 hours at 350 degrees. Serves 6.
