REUBEN MEATBALL CASSEROLE 
1 c. cooked rice
1 1/2 lb. ground beef
1 egg, beaten
1/4 c. chopped parsley
1/2 c. chopped onion
1/3 c. dry bread crumbs
1/3 c. crushed cornflakes
1/2 tsp. salt
1/4 tsp. pepper
2 c. sauerkraut, drained
1 c. shredded Swiss cheese
Caraway seed
1 can mushroom soup
1 c. salad dressing or mayonnaise

Combine cooked rice, ground beef, egg, parsley, onion, bread crumbs, salt, pepper and cornflakes. Shape into 1 inch balls and place in greased baking dish. Cover meatballs with kraut. Sprinkle caraway seeds on top. Mix soup and salad dressing and spread over top. Bake at 350 degrees for 40-50 minutes. Remove from oven and sprinkle the 1 cup shredded Swiss cheese over top. Bake 10 more minutes until cheese bubbles.
