MY FAVORITE JAMBALAYA 
1 1/2 c. long grain rice
3 tbsp. butter
1 c. onions, finely chopped
2 c. chicken stock or 5 cubes chicken bouillon, dissolved
1 c. tomato sauce
3 cloves garlic, finely chopped
10 fresh mushrooms, sliced
1/2 c. green pepper
3 tbsp. minced parsley
2 stalks celery, chopped fine
1 c. seasoning ham, cubed
1/4 c. smoked sausage, sliced
1/4 c. hot smoked sausage, sliced
2 bay leaves

In butter, saute onions, green peppers and celery. Add ham and sausage, stir 1 or 2 minutes. Add tomato sauce and all other seasonings. Add chicken stock or bouillon cubes dissolved in 2 cups water.

Allow this to come to a boil, lower heat and add bay leaves. Cook for 18 or 20 minutes. Test rice for doneness. Add water if needed and rice is cooked.
