SAUSAGE AND CHICKEN JAMBALAYA 
rown:

1 pound hot sausage
1 pound regular sausage

Spoon browned sausage in bowl layered with paper towels. In remaining grease

aute until opaque:

1 yellow onion minced
1 white onion minced
2 cloves garlic
1 large bell pepper

Place in large pot with 8-10 cups boiling water.

dd:

1 cup chopped celery
1 cup chopped fresh parsley
1 bunch green onion with tops, chopped
3-4 tbsp. Tony Chachere's Creole Seasoning
Ceyenne Pepper to taste-optional

After water comes back to a boil, add 2 pounds chopped chicken, and cook for 10 minutes. Add 4 cups uncooked rice and cook until done. Turn off heat and stir in sausage. Let sit for 1-2 hours to blend flavors. (This recipe is also good with Shrimp instead of chicken.)
