PORK JAMBALAYA WITH BURNT SUGAR 
3 lb. pork ribs, cut into pieces
1/2 c. onion, chopped
1 tsp. sugar
1 c. raw rice
3 c. water
1/4 c. bell pepper, chopped
Oil
Salt, black and red pepper
Onion tops
Parsley

Select a thick black iron pot. Put in enough oil to cover the bottom. Heat until hot. Season ribs and brown in hot oil. Take ribs out. Stir in sugar and brown. Put ribs back in. Saute the onion and bell pepper until wilted. Add raw rice to pot along with the water. Cover and cook slowly until done. Add onion tops and parsley and cook for 15 minutes. If mixture cooks down too much, add a little more water.
