FINNISH APPLE CAKE 
1/4 c. butter, softened
1 c. sugar
2 lg. eggs
2 c. sifted flour
1 1/2 tsp. baking powder
Dash of salt
3/4 c. light cream or sour cream
2 apples, peeled, cored and sliced
2 tbsp. sugar, mixed with
1 tsp. cinnamon

In medium bowl of electric mixer, cream butter and sugar together until fluffy. Add eggs, one at a time, beating well after each addition. Re-sift flour with baking powder and salt; add to batter alternately with cream or sour cream. Mix until batter is velvety and pour into well greased 9 x 13 inch baking pan. Insert apple slices in rows so rounded edge stands upright in batter. Sprinkle evenly with cinnamon sugar and bake at 350 degrees for about 50 minutes or until cake is nicely browned and tests done. Cool on wire rack and serve either slightly warm or completely cooled. Makes about 12 servings.
