SAUTEED GEODUCK 
2 geoduck, about 1 lb. each
3 eggs
Vegetable oil, preferably peanut
4 tbsp. unsalted butter, clarified
Flour
Salt and pepper
Garlic butter
White wine
Lemon

Clean geoduck, slice steaks from neck and breast and pound neck steaks to tenderize. Whip eggs with 3 tablespoons vegetable oil to make batter. Salt and pepper batter to taste.

In heavy skillet, heat equal amounts of clarified butter and vegetable oil until quite hot but not smoking.

Salt and pepper geoduck steaks to taste. Dredge in flour on both sides. Shake off excess flour, then dip steaks in batter and saute briefly on both sides until brown. Set steaks aside on hot platter.

Clean skillet and return to heat. Add 4 to 5 tablespoons garlic butter and heat until foaming. Remove from heat and stir in 4 to 5 teaspoons white wine and a couple squeezes of lemon juice. Pour sauce over geoduck steaks and serve immediately. Serves 4-6.
