SAUTEED VEGETABLES - INDIAN
STYLE
 
3 c. chopped, boiled potatoes
1 c. frozen peas, defrosted
2 tbsp. cook oil (your choice)
1 tsp. finely chopped green pepper
1 clove garlic, finely minced
1 tsp. salt
1/2 tsp. cumin seeds
1 tsp. parsley, finely chopped
1/2 tsp. turmeric powder
1 tbsp. chopped onion

On low heat in a medium non-stick pan, add cooking oil, cumin seeds, garlic, green pepper; saute for 1 to 2 minutes. Add turmeric powder and onion; saute for 3 to 4 minutes. Turn to medium heat; add potatoes, peas, salt. Saute for 5 to 6 minutes. Garnish with parsley before serving. Serves 4 people. (Cauliflower, eggplant, cabbage or other vegetable may be substituted for potatoes.)
