MARINATED CHERRY TOMATOES 
1 pt. cherry tomatoes
1/2 c. fresh lemon juice
1/4 c. snipped basil leaves
3/4 c. olive oil
Salt & pepper to taste

Prick each tomato all over with a fork. Mix lemon juice and basil. Pour oil over mixture. Whisking until liquids are thoroughly blended. Season to taste. Place tomatoes in shallow glass dish and cover with lemon-oil dressing. Chill for several hours, tossing occasionally.
