BEST EVER PANCAKES 
2 1/2 c. flour
1 tsp. baking soda
4 tsp. baking powder
4 tsp. sugar
1 tsp. salt
Dash of cinnamon
4 eggs, well beaten
1 stick butter, melted
2 1/2 c. buttermilk (can use Saco powdered buttermilk; follow directions on can)

Sift dry ingredients. Combine eggs and buttermilk. Add dry ingredients to egg mixture and mix well, but do not beat. Add butter and blend well. Cook pancakes on hot griddle. Batter keeps well in refrigerator if tightly sealed.
