MA'S BEST PANCAKES 
3 eggs
2 c. buttermilk
2 c. flour
1 tsp. baking soda
1 tbsp. sugar
1/4 c. butter, melted

Separate yolks from whites. Beat yolks in large bowl until lemon in color. Slowly add buttermilk with a wooden spoon. Beat egg whites in separate bowl until stiff.

Add baking soda, flour, and sugar to egg yolk mixture. Do not over beat. Stir in melted butter. Fold egg whites into pancake mixture. Heat should be medium. Pancakes will NOT cook on the inside if done over high heat. This is very important.
