BETTY'S EGGS OLE 
Butter or oil, to grease pan
3 (4 oz.) cans green chilies, mild
1 lb. Monterey Jack cheese
12 eggs
16 oz. sour cream
Salt & pepper to taste

Preheat oven to 375 degrees. Grease the bottom and sides of a 9 x 12 inch baking dish with butter or oil. Break open the chilies and wash out the seeds. Line the bottom of the baking dish with the chilies, slice the cheese into medium-sized pieces and place on top of chilies to cover evenly.

In a large bowl, beat eggs with sour cream until well blended. Add salt and pepper to taste. Pour mixture over chilies and cheese. Bake uncovered for 30-40 minutes. The eggs are done when a knife inserted into the dish comes out clean. Serves 5.

I have been using this recipe for almost 40 years. I guess saw it in Readers Digest back in the days of All My Children when Palmer Courtney put in his favorite recipe for company breakfast. I've done variations over the years adding cooked bacon pieces or diced ham. It never fails to please & you can make it the night before. Taking it camping this weekend. Still love it!

I can't believe it. I remember making this and it was so nice. Thanks for posting this great recipe. It goes super well with a salad. Best. Too bad they canceled All My Children -- it was fun to watch -- and that was the end of it all as we knew it.
